These short ribs did not quite meet our strict quality standards. They either did not have sufficient marbling or had a higher fat-to-meat ratio, so we are marking them 35% off!

These short ribs will still be delicious smoked or braised. They can also be trimmed down and used to make your own cooking tallow. I have a recipe on how to do so here.
