Flank Steak Salad

Ingredients:

  • 1 pound flank steak
  • 3 cloves garlic, minced
  • 1 to 2 heads of Romaine lettuce, chopped
  • 1/2 purple onion, chopped
  • 1/3 cup Fresco cheese (Mexican crumble cheese)
  • 1 avocado, sliced
  • 1/2 cup Mexican table cream (as dressing)
  • 1 lime, wedged
  • 1/2 teaspoon cilantro, chopped
  • 1/2 teaspoon red chili flakes

Instructions:

  1. Cook the flank steak in a skillet over medium-high heat until it reaches desired doneness. Set aside to rest for a few minutes, then slice thinly.
  2. In the same skillet, add the minced garlic and cook for about 1 minute or until fragrant.
  3. In a large bowl, assemble the salad by layering the chopped lettuce, purple onion, and sliced flank steak.
  4. Top the salad with crumbled Fresco cheese, sliced avocado, and drizzle with Mexican table cream.
  5. Squeeze the juice from the lime wedge over the salad, and garnish with chopped cilantro and a sprinkle of red chili flakes.
