Creamy Avocado Beef Salad
I prefer to use our dry-aged ground beef for this recipe, which has around a 85/15 lean-to-fat ratio. I always make sure to brown the ground beef until it’s nice and crispy to showcase our beef's flavor! I think we often forget how versatile ground beef can be, but it can be used in so many dishes and is always easy and affordable.

Ingredients:
- 1 lb Ground Beef
- Seasoning for ground beef (I like to use LHF Seasoning, paprika, chili powder & cumin)
- 2 cloves garlic, minced
- Lettuce or salad mix of your choice
- 1/2 purple onion, chopped
- 1/3 cup Fresco cheese (Mexican crumble cheese)
- 1 avocado, sliced
- 1/2 cup Mexican table cream (for dressing)
- 1 lime, wedged
- 1/2 teaspoon cilantro, chopped
- 1/2 teaspoon red chili flakes
Instructions:
- Brown ground beef in cast iron skillet, add in garlic and seasoning as desired.
- In a large bowl, assemble the salad by layering the chopped lettuce, purple onion, and ground beef.
- Top the salad with crumbled Fresco cheese, sliced avocado, and drizzle with Mexican table cream.
- Squeeze the juice from the lime wedge over the salad, and garnish with chopped cilantro and a sprinkle of red chili flakes.
